Cambridge, UK – With the Food Tracker temperature profiling system, Datapaq provides an exact and reliable solution for HACCP-compliant process validation and documentation of poultry, meat, and seafood processing, pasteurization, sterilization, and baking processes. The MultiPaq21 data logger passes through the oven or freezer with the food product. Thermocouples can be placed in or above the product. Set apart from the product, the measuring system, in contrast to other customary solutions, does not influence the product temperature. The thermal barriers are manufactured from the same insulation material as black box flight recorders and designed to last many years. Applications include blast freezing, long duration high temperature bakery, or even flash frying, where the whole system is submersed in oil. The logger has a non-volatile memory large enough for up to eight consecutive measurement runs. Additionally, an optional integrated radio transmitter can send real-time temperature data to receivers outside the process, enabling instant parameter review and adjustment. The accompanying Insight software provides comprehensive analysis functions including microorganism lethality calculations (Fo, Pu). Automatic alarms and data analysis can be used to confirm that target CCPs such as maximum temperature and dwell time have been achieved.
